食用百合主要分三類：卷丹百合、龍牙百合、蘭州百合。

1、卷丹百合。

卷丹鱗莖富含澱粉，供食用，亦可作葯用；花含芳香油，可作香料。在中國，百合的球根曬干後更可用來煮湯，而且植株的多個部分可入葯。

（2）種球繁育：利用百合地下鱗莖分化獲得小鱗莖種球進行無性繁殖。

（3）管理技術：3年以上輪作倒茬，施用有機肥，栽植密度一、二級種球8000株至10000株/畝，及時摘花蕾，在乾旱特殊年份進行人工灌溉。

採收時間。3年生成品百合在10月底到11月中旬或早春3月中下旬採收。
