茶叶不仅是一种老少咸宜的饮料,而且它治病强身的功效也不容小觑。茶叶所含的各种营养成分,是茶叶对人体健康有益的物质基础,也使得茶叶日益受到世界各国人民的欢迎。有人把茶叶称为“原子时代的饮料”、“二十一世纪的饮料”,的确是很有道理的。

茶叶的成分很复杂,作为一种食品,茶叶含有大量人体所需要的能量和营养素,有很高的营养价值。

能量能量是维持机体代谢活动所必需的物质,是由碳水化物、蛋白质和脂肪这些生热营养素提供的。与其他食品相比,茶叶是一种低能量食物,但不同种类的茶叶所能提供的能量不一样。一般来说,茶质量越好,能量越高。每100克茶叶提供能量以绿茶最高,而砖茶的能量最低,这是因作为原料的茶叶质量不高。如在茶叶中加入牛奶和糖,每天饮茶6杯,约1100毫升,所获得的能量可占全天饮食提供能量的7%~10%。故国内外有人喜欢饮牛奶茶或糖茶。

蛋白质“生命是蛋白质的存在形式”,也就是说没有蛋白质就没有生命。蛋白质有非常重要的营养功用,在评价蛋白质的营养价值时,主要是看其中必需氨基酸种类是否齐全、比例是否合适、数量是否充足。茶叶中氨基酸种类齐全,只是比例尚不够合理。令人感兴趣的是,茶叶中还含有大量的茶氨酸,这是茶叶所特有的,是形成茶叶风味的主要成分。

与一般食物相比,茶叶中蛋白质的含量很高,达20%~30%。其含量与茶叶的质量有密切的关系,绿茶中的蛋白质高于其他类型的茶叶。但在泡茶时能溶于水的蛋白质还不到2%,其余绝大部分留在茶渣中不能被利用,因此每天从饮茶中摄取的蛋白质是很少的。但如将茶叶吃下,则可得到数量可观的蛋白质,而在茶汤中加入牛奶、酥油或乳酪等,还能给茶叶增加多量的优质蛋白,可以有效地提高茶叶原有蛋白质的营养价值——如藏族的酥油茶和蒙古族的奶茶。

碳水化物碳水化物就是通常所说的糖类,根据其化学结构,可分为单糖、双糖和多糖等。以往的资料认为茶叶中碳水化物的含量不高,一般在10%以下。而新的报道表明,茶叶中的碳水化物含量多在40%左右,某些优质茶叶可高达60%以上,这可能是因为和以前的测定方法不同所致。茶叶中的碳水化物多为多糖类,而能在沸水中溶出的多糖仅2%左右,占茶叶水溶物的4%~5%,因此通常认为茶是低能量低糖饮料,适合于糖尿病和其他忌糖患者饮用。

脂肪脂肪的主要功能是提供能量,同样体积的脂肪所提供的能量是碳水化物或蛋白质的2.25倍。茶叶中的脂类含量不太高,绿茶和红茶一般不超过3%,砖茶可能是加工过程中加入一定量的脂肪,其含量可达到8%左右。茶叶中的脂类有磷脂、硫脂、糖脂和甘油三酯等,其中的脂肪酸——亚油酸和亚麻酸,为人体必需脂肪酸。故饮茶可以使人体获得一定量的脂肪酸,但因其含量很低,所提供的量是很有限的。

维生素维生素是维护身体健康所必需要的一类有机化合物,体内不能合成,必须由食物供应。虽然这些物质在体内所占比例很小,但作用很大,是调节体内物质代谢必不可少的。

茶叶中含有大量的维生素C,其含量因茶叶种类不同有很大的差异,其中绿茶比红茶高,高档绿茶含量更高。维生素C具有非常重要的生理功能,能防治坏血病、癌症及其他多种疾病。在二战中,为防治日本远征部队的坏血病,当时日本的粗茶几乎全部控制在海军手里。

茶叶中B族维生素的量是比较丰富的,如每天饮茶25克,可满足人体25%的需要量。通常绿茶中的B族维生素的含量高于其他类型的茶叶,以细嫩的茶叶中含量较高。B族维生素参与体内多种生理生化代谢过程,维持神经、心脏及消化系统的正常功能。

矿物质和微量元素茶叶中无机物质占4%~9%,其中50%~60%可溶解在热水之中,能被人体吸收利用,并且多有益于健康。茶叶中含量最多的无机成分是钾和磷,其次是钙、镁、铁、锰等,而铜、锌、钠、硫、氟等元素较少,不同的茶含量稍有差别。此外,由于茶叶有浓缩环境毒性物质的特性,有时其也含有一些对人体有害的元素,如铝、铅、镉等,并且其浸出率均在60%左右,这已引起有关方面的注意。

茶叶中的矿物质和微量元素对人体是很有益处的。其中的铁、铜、氟、锌比其他植物性食物要高得多。前苏联的科学家发现茶叶中的铜和铁可以提高红细胞形成的能力,有治疗贫血的作用,而且茶叶中的维生素C有促进铁吸收和利用的功能。氟是人体骨骼和牙齿珐琅质生长不可缺少的物质,茶叶中的氟较一般植物性食物高得多,可达10~15毫克/100克,其中80%溶于茶汤之中。每天饮茶10克,可获得1毫克的氟,已基本满足人体的需要;饭后用茶液漱口效果良好,尤其对学龄前儿童护齿更有好处,但儿童不宜多饮茶,特别是浓茶。硒是人心肌代谢不可缺少的元素,此外硒还有抗癌和防癌作用。陕西的紫阳茶含有丰富的硒,实验研究发现其有抗突变的效果。

总之,茶叶中含有非常丰富的营养物质,特别是其中的蛋白质、维生素、矿物质和微量元素,是一般植物性食品不能比拟的。作为低能量和低脂肪的食品,其具有很高的开发和运用价值。因为加工过程中的某些步骤会使氨基酸或维生素等营养素遭到破坏,故而绿茶的营养价值高于其他各类茶叶。但是迄今为止,茶叶仍主要是被当做饮料,这一点在国内外都是如此。茶叶中的某些有效成分不能溶解在水中,泡茶时溶出的成分仅是其中的少量,绝大部分被当做废料丢弃,这样就使茶叶的营养价值大大降低,实在可惜。如将茶叶加入到其他食品中去,成为名符其实的吃茶,这样可使茶叶的营养功能得到充分发挥。
